Pear Gingerbread

Ingredients

  • 2-1/2 cups all-purpose baking mix such as Bisquick
  • 1-1/8 teaspoons ginger
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon cloves
  • 2 tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 1/2 cup molasses
  • 1 egg, lightly beaten
  • 1 (15-ounce) can Pacific Northwest Canned Pears, halves or slices, in juice, drained
  • Freshly whipped cream to serve, optional

Method

Preheat the oven to 350 degrees F. Lightly grease an 8 by 8-inch baking pan. In a small bowl, combine the baking mix, ginger, cinnamon and cloves; set aside.

In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar until the mixture is crumbly. Add the molasses, mixing to combine. Add the reserved dry ingredients in 3 additions, alternating with 1/2 cup hot water, in two additions of 1/4 cup each. Add the egg.

Pour the batter into the prepared baking pan. Dice the pears and scatter them over the batter, pressing them in lightly. Bake 40 to 45 minutes or until a knife inserted in the center comes out clean. Remove the pan from the oven to cool on wire rack. When cool, serve with a dollop of whipped cream if desired.

  • 2 cups Molasses
  • 1 lb. 12 oz. All-purpose baking mix (such as Bisquick)
  • 1-1/2 Tbsp. Ground ginger
  • 1 tsp. Ground cinnamon
  • 1/2 tsp. Ground cloves
  • 2 cups Hot water
  • 5 Eggs, beaten
  • 1 lb. 12 oz. (1 qt.) Pacific Northwest Canned Pears, diced, drained
  • Optional, for garnish Whipped cream or whipped topping

Method

Beat butter and sugar until crumbly. Beat in molasses; reserve. Mix dry ingredients. Beat dry ingredients alternately with hot water into butter mixture. Beat in eggs. Pour into greased 12" x 20" x 2" pan. Scatter diced pears over top of batter; lightly press into batter. Bake at 350°F until a toothpick in the center comes out almost clean, for about 40 minutes. Cool; cut into 48 servings, 2" x 2-1/2" each. Optional: serve each portion with a dollop of whipped cream or whipped topping.
