Nutella Pear Muffins

Makes 8 Jumbo Muffins (1 muffin per serving)


  • 2 cups Pacific Northwest Canned Pears, diced
  • 1/2 cup, 3/4 cup Nutella (hazelnut spread)
  • 3/4 cup flour
  • 4 tsp. baking powder
  • 2 Tbsp. cocoa
  • 1/2 cup vanilla yogurt
  • 4 eggs
  • 3/4 cup sugar
  • 1/3 cup canola oil
  • 1-3/4 cup powdered sugar
  • 3/4 cup unsalted butter

    Pre-heat oven to 325°F. Drain pears and mix with 1/2 cup Nutella. In a mixing bowl, sift together flour, baking powder and cocoa. Mix together eggs, sugar, yogurt and oil. Stir wets into flour mixture. Carefully stir in pear-Nutella mixture. Line jumbo muffin tin with paper liners; divide the batter evenly into the lined muffin tins. Bake for about 20 -25 min., or until an inserted knife comes out clean. Make a glaze from the powdered sugar, softened butter and ¾ cup Nutella, add water until glaze is spreading consistency. Glaze warm muffins and serve. ALTERNATE SERVING SUGGESTION: Omit glaze and serve muffins inverted, with bottom facing up, and sprinkle with flake salt.
