Pear & Caramelized Walnut Salad

Yield: 6 servings


  • 8 cups Romaine lettuce, chopped
  • 2 cups Mesculin Mix
  • 1 cup Pacific Northwest Canned Pears, diced, drained
  • 1 cup Caramelized Walnuts
  • 3/4 cup Blue cheese crumbles
  • 1/2 cup Dressing (see recipe)

    Combine in bowl and toss until evenly coated with dressing.

    CARMELIZED WALNUTS (Yield: 1 cup)
    2 cups Water
    1 cup Walnut pieces, 1/4" diced
    3 Tbsp. Sugar, white
    Boil water. Add walnuts and cook 40 seconds. Drain the walnuts. Combine walnuts and sugar in a bowl. Stir to coat. Place sugar covered walnuts on a sheet pan and bake at 325°F for approx. 8-10 minutes or until golden brown.

    DRESSING (Yield: 1/2 cup)
    1/4 cup Canola oil
    1/4 cup Red wine vinegar
    Combine ingredients and whisk until thoroughly combined.
