Pear & Blue Cheese Focaccia

INGREDIENTS

  • 4 lbs. Frozen pizza or bread dough, thawed
  • As needed Olive oil
  • 1 lb. 12 oz. (1 qt.) Pacific Northwest Canned Pears, diced, drained
  • As needed Dried thyme leaf
  • 10 oz. (2-1/2 cups) Blue cheese, crumbled
  • METHOD

    Roll dough to fit an 18" x 26" sheet pan. Press dimples all over surface with finger tips. Brush dough with olive oil. Scatter with diced pears; sprinkle with thyme and cheese. Bake at 400°F until crust is browned and cheese melts, about 10 minutes. Cut into 24 squares, about 4-1/2" x 4-1/2".
