Pear Up Carrot Salad

Makes 4 Servings

INGREDIENTS

  • 1 cup coarsely shredded carrot
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped onion
  • 1 tablespoon chopped parsley
  • 1/4 teaspoon salt
  • 2 tablespoons reduced-fat honey mustard salad dressing
  • 1 can (15 ounces) Bartlett pear halves, drained
  • METHOD

    In bowl combine carrot, celery, onion, parsley and salt. Mix well. Stir in salad dressing. Mound 3 to 4 tablespoons mixture on each pear half. Serve on lettuce leaf, if desired.
