Nutty Pear Slaw

Makes 8 Servings

INGREDIENTS

  • 3 cups (8 ounces) Coleslaw mix, packaged
  • 1 can (15 ounces) Bartlett pear halves, chopped
  • 1/2 cup dry roasted peanuts
  • DRESSING
  • 1/4 cup olive or vegetable oil
  • 2 tablespoons orange juice
  • 2 tablespoons white wine vinegar
  • 1-1/2 teaspoons Dijon-style mustard
  • 1/2 teaspoon onion salt
  • 1/4 teaspoon black pepper, coarsely ground
  • METHOD

    In small bowl, combine dressing ingredients, whisk until blended. In large bowl, combine coleslaw mix and pears. Add dressing; toss lightly to coat. Add chopped peanuts; re-toss just before serving.
