Pear Almond Couscous

Makes 4 Servings

INGREDIENTS

  • 1 can (14-1/2 ounces) chicken broth
  • 1/4 cup raisins
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1 can (15 ounces) Bartlett pears, drained, chopped
  • 1 tablespoon lemon juice, fresh
  • 1 cup couscous
  • 1/3 cup almonds, sliced
  • 2 tablespoons cilantro, fresh, chopped
  • 1 tablespoon butter or margarine
  • METHOD

    In medium saucepan, combine broth, raisins, salt, cumin and pepper; bring to a boil. Remove from heat; stir in pears, cilantro and lemon juice. Cover; let stand 10 minutes. Stir before serving.
