Balsamic Pears and Chicken with Blue Cheese

Makes 4 Servings

INGREDIENTS

  • 1 can (15 oz.) Pacific Northwest Canned Pear Halves in syrup, drained and syrup reserved
  • 4 (5 oz. each) boneless, skinless chicken breasts
  • 1 Tbsp. olive oil
  • 1/4 cup reserved pear syrup
  • 1/4 cup balsamic vinegar
  • 2 tsp. cold unsalted butter
  • 2 oz. (about 1/3 cup) blue cheese, crumbled
  • METHOD

    Preheat oven to 350F. Season chicken breasts with salt and pepper. Heat olive oil in large skillet over medium-high heat; sear chicken until golden brown on each side. Remove chicken to baking pan and finish cooking in oven. While chicken is cooking, deglaze skillet with reserved pear syrup and balsamic vinegar. Stir over medium heat until liquid is slightly reduced and syrupy; whisk in cold butter until just incorporated. Season to taste. Add pear halves, turning to coat with sauce. Remove from heat. To serve, place chicken breasts on serving plates. Drizzle with sauce. Place pear halves next to chicken and fill with blue cheese. Crumble additional cheese over chicken breast as garnish.
