Makes 6 Servings
2 cans (15 ounces each) Bartlett pear halves, in juice or light syrup
2 tablespoons margarine
1/3 cup brown sugar
1 tablespoon lemon juice
1/4 cup maraschino cherries, halved
1/4 cup brandy, optional
Drain pears, reserving all liquid. Melt margarine in medium frying pan. Stir in brown sugar, lemon juice, pumpkin pie spice and reserved pear liquid. Bring mixture to a boil. Boil 5 minutes, until mixture is reduced and thickened. Stir in pears and cherries; boil 5 minutes until mixture thickens. Transfer pears and sauce to serving dish. Meanwhile heat, but do not boil, brandy in a small saucepan. Light with a match and pour flaming brandy over pears to serve.
ALTERNATIVE: Heat brandy to boiling and stir into pear mixture before transferring to serving dish.
