Stormy Day Breakfast Bread Pudding

Makes 6 Servings


  • 2 cups low-fat milk
  • 2 eggs
  • 1/3 cup packed brown sugar
  • 3/4 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 cups dry bread cubes
  • 1 can (15 ounces) Bartlett pears halves or slices, drained, chopped
  • 1/8 teaspoon ground cinnamon
  • 1 cup low-fat granola

    In large bowl, combine milk, eggs, brown sugar, vanilla and salt; add bread cubes. Pour mixture into lightly greased 8 x 8-inch pan. Arrange pears over bread; sprinkle with cinnamon, top with granola. Bake at 350°F 50 to 60 minutes or until knife inserted near center comes out clean. Let sit for five minutes. Serve warm.
