Makes 48 Pearlets


  • 2 cans (15 ounces) Bartlett pear halves or slices
  • 3 tablespoons unflavored gelatin
  • 2 cups sugar
  • 1-1/2 cups chopped walnuts
  • 2 tablespoons lemon juice
  • 2 teaspoons vanilla extract
  • 3/4 cup sifted powdered sugar

    Drain pears, reserving liquid for other uses. Puree pears in processor or blender until smooth. In small bowl, combine 1/2 cup of the pear puree and gelatin; stir well. Let stand 5 minutes. In medium saucepan, combine remaining 1 cup puree and sugar; bring to a boil. Stir in gelatin mixture. Reduce heat and simmer for 15 minutes, stirring occasionally. Remove from heat; stir in nuts, lemon juice and vanilla. Pour into buttered 8 or 9-inch square pan. Refrigerate overnight. Cut into 48 pieces; roll pieces in powdered sugar. Return to refrigerator for 4 to 6 hours. Roll in powdered sugar again; store in covered container at room temperature.
